So, I work at a bookstore/espresso bar, and some weird shit happened today. I was making a strawberry cremosa, and when I put the cream in, it had some weird reaction with the syrup and made some pink cottage cheese-looking stuff and started expanding and spilling over the top of the cup.
Does anyone know what the hell happened and how I can keep it from happening in the future?

| Possibly too much syrup, the citric acid in some of those can curdle creams if you're using actual cream |

This'd be my guess. I don't know what's in a cremosa, but if it's at all citrus flavored or carbonated, you have to be real careful, because that stuff will curdle cream. _________________ "Whatever afflicts thee, their asses I shall kick"

the cream might have been on the verge of going bad. I'm a caterer and i was filling a stainless steel thermos with cream for a coffee drop one time and once the cream hit the coffee, it curdled instantly, even though the cream looked fine & it was before the expiration date. let your dairy provider know so you can get a credit for it. _________________
