A question for you bakers out there -

I'm planning to bake a cake for my wife's birthday. The recipe that I like calls for three 8" cake pans. We have three 9" cake pans.

If I use them without altering the recipe, will there be any impact, other than the layer's only being 4/5 as thick as they would have been in the 8" pans? Do I need to adjust the temp or time?

Should I increase the measurements by 25% to make them just as thick? (I don't think I can increase 3 eggs by 25%.)

No change to the recipe or temp. You will need to cut the time a bit but considering the variation in ovens, I can't say by how much. Just toothpick/knife it earlier in the stated time. You may also need a bit more icing.

you shouldn't need to change the temp but using a different pan probably will change cook time. I don't know that being in a slightly larger pan would have very much effect, but the cake will be thinner and thus possibly cook faster and so burn easier. and on the flip side, in a cake pan smaller than recommended would be thicker and thus take longer to cook. if it we me I would be checking on it's progress a little more often than normal, so you should probably stick a fork or a butter knife in one of the cakes routinely to check if it's done.

oh, and you didn't mention what kind of pans you have and what kind you want to use: rectangle, round, square, loaf, etc.

this site lists most conventionally used baking pans and sizes and tells you what other types can be used as substitute.

Sorry - I am referring to round cake pans.

Thanks for the responses. It's about what I expected (same volume spread out thinner = greater surface area to volume ratio, shortening the cooking time).

Baking can be less forgiving than stovetop cooking. I'm doing this as a surprise, so I really only have one shot at it. With no chance to experiment, I wanted to start off with the best chances of success.
