Onions and Peppers = good.
Please continue to post recipes that contain them as well as the others. I think we all find this thread helpful.
While I don't have anything great to add one thing I will mention is:
Pizza Eggs:
Scrape the toppings off leftover pizza, try to break up into small pieces, mix in a bowl with eggs and milk and make scrambled pizza eggs.
Kinda like a simple omlette and a way to use leftover pizza cause for some reason I don't like cold pizza like I used to.
Also:
BLT sandwiches and you can use that ReadyCrisp micro bacon to keep the kitchen cool its really not that bad.
Tuna Salad or Stir Fry Chicken garnished to taste and wrapped in big Romaine lettuce leaves instead of bread.
Rip leftover chicken into small bits add shredded cheese and salsa and wrap in warm tortilla shells for quickie quesidallas. _________________ Build a man a fire and he'll be warm for a night. Set a man on fire and he'll be warm for the rest of his life.

Slightly too old to eat as is, but not bad mashed potatoes make the best EVER homemade "hash browns" (not really hash browns but I don't know what to call them).
Heat up potatoes a little bit, until room temperature. Add some butter. Add some pepper and salt, and whatever you feel is appropriate; I use cheese or maybe bits of leftover bacon, roast chicken or sweetcorn or canned tuna is also yummeh.
Fry in a pan with almost no oil or none at all. Let potatoes brown in some places and mix up occassionally to get patches of crispy. Eat with ketchup. Lots of ketchup. Unless you're doing tuna and sweetcorn, in which case, aioli is better.
MMMMMMM.
Warning: Calorie count is phenomenal. |

I like to cut potatoes into thick slices and then fry them in vegetable oil along with onions, tomatoes, bell peppers, and chunks of sausage, all seasoned liberally with salt, pepper, and paprika. When everything is about done, cut the heat and top with a few slices of cheese (I normally have swiss lying around) that have been cut into smallish pieces. Wait about twenty seconds then stirr the whole thing so that the melted cheese coats everything else.

well, i suppose you could substitute out other veggies.
mouse's quick gazpacho
1 12-oz can tomato or v8 juice, cold
1/2 cucumber, peeled and chopped
1/2 bell pepper, chopped
1/4 avocado, chopped
1/4 sweet onion (or a scallion or two), chopped
~1/4 tsp dried oregano
1 T vinegar (red wine vinegar is best here)
1 tsp olive oil (if you want)
2 oz cooked shrimp, in bite-size pieces (if you want the protein)
salt & pepper
juice of 1/2 lime
hot sauce (if you like)
combine and eat - wonderfully filling and cooling. _________________ aka: neverscared!

I taught my daughter (when she was just 2) to say that when she is given a spoon. A waitress gave her a funny look when she actually did it at a restaurant. Maybe because she was lisping " 'poon ". |

to beat the summer heat, my george foreman grill has become my best friend... hot food with less mess and less hot kitchen...
now for a recipe:
OC's Homemade Chili:
2-3 pounds ground chuck
1 Large Onion
2 cans diced tomatos (or 10-12 vine ripened tomatos, diced)
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 Jalapeno pepper, finely diced
1 large can sliced mushrooms (or 10-15 fresh mushrooms sliced)
6-8 tbsp. chili powder
1 tbsp. black pepper
1 tbsp. white pepper
1 tsp. paprika
1 tsp. crushed red pepper (optional, to taste)
Optional: if you don't like it so thick, or just want to strech it out a bit, 1 can tomato or v8 juice.
brown ground beef, onion, and various peppers, drain. add all other ingredients to large pot, add drained mixture to pot, bring to boil, then reduce heat, cover and simmer for 1 hour... thick and chunky and it serves 6+ people... serve with crackers, and if you like it hotter, add some tabasco sauce and franks red hot sauce to taste.... to reduce the acidity, add 2 tbsp. of sugar.
