Shakshuka. It is delicious, easy, quick (well, as long as you have a rice cooker or buy pitas), and we make it all the time.

Doesn't that look amazing? We are having it again tonight. We make it with rice because I learned in Mexico that rice + egg is DAMN tasty.

there seems to be a family of eggs-poached-in-sauteed vegetables recipe (shakshuka looks to be descended from a recipe in claudia roden's book of jewish food, possible cross-pollinated with a similar recipe in the same book that uses peppers instead of tomatoes - which would make sense, since shakshuka is an israeli dish). it is also quite similar to huevos rancheros (which makes it interesting that you discovered shakshuka rather than huevos rancheros in mexico).
still, doesn't hurt to be reminded how tasty all the members of the family are (and i like the touch of adding feta). _________________ aka: neverscared! |

Huevos rancheros is a fried egg with salsa on it and sometimes with a corn tortilla underneath. The poaching is an integral part of the dish that looked so tasty and easy. And I had never considered poaching while fried eggs are commonplace. I just never really connected the two.
Okay okay, the first time Chris cooked it we were missing some of the spicy that we were expecting. Chris tossed in a can of mexican hot sauce (not hot sauce like tabasco but a sauce you would pour over meat) and it tasted great. In fact, it tasted very similar to the next time I made it where I followed the recipe better.
That mexican sauce (it says salsa but they mean sauce in english rather than what you would dip chips into) is really good and downright fantastic on taco meet and mixed half with manwich.

around here, the eggs are poached in the salsa, and the tortillas are served alongside - if there is anything under the egg, it's half an avocado.

For those of you I'm not friends with on facebook, here's my recipe for Fourth of July jello shots...on a STICK.
Ingredients
* 2 3oz boxes strawberry Jello
* 2 3oz boxes berry blue Jello
* 5 envelopes Knox gelatin
* 1/4 C sweetened condensed milk
* 1 C vodka
* Lollipop sticks
Notes
* I used 4 8x4 loaf plans and 1 8x8, but you can adjust this
* This requires two jello settings: the first for a few hours and the second overnight. Plan accordingly.
STEP ONE - making jigglers (strawberry, berry blue, and the white sweetened condensed milk stuff)
- Spray the pans you're going to use with baking spray.
- Boil one and a half cups of water, take it off the heat, add 6oz of jello powder and stirred until dissolved, then pour in a half cup of vodka. Pour into either one 8x8 pan (pre-sprayed) or two 8x4 pans. Do this for both the strawberry and the berry blue.
- For the white jello, warm 1/2 cup of water mixed with one packet of Knox gelatin over medium low heat. Remove from heat, and stir in the half cup of condensed milk. Pour into an 8x4 pan.
- Place all of the above in the fridge and let set at least a few hours.
STEP TWO - combining it
- Set the pans in warm water. Dice jello into cubes (this can be done directly in the pans).
- Mix the diced jello into two of the 8x4 pans (I made one predominantly blue and the other predominantly red)
- Boil two cups of water, remove from heat, and then sprinkle four packets of Knox gelatin over it. Mix until dissolved.
- Pour the COOLED gelatin mixture over the diced jello until about 3/4 full (you do not want to submerge all of the cubes). This is to bond the diced jello together.
- Place into the fridge and let set overnight.
STEP THREE - putting it on a stick
- Carefully cut the jello width-wise out of the pans in 1" strips, wiggling your knife to give it a jagged edge
- Skewer it with a lollipop stick
Mine fell apart fairly easily. But they still looked awesome. Don't leave them out in the sun for long. |
